It’s a New Year and the thick of the winter. Trying to set financial and health goals are very common. A simple recipe that doesn’t add to life’s stress, provides nutrients that our bodies need more of in the winter, and is budget-friendly. Oh, did I mention there are black eyed peas in it? I think eating them past New Year’s Day will bring extra good luck. 😉
My Mimi makes this dish for family gatherings (Back when we weren’t scared to stand around her kitchen island munching on snacks…), and it is always a hit! She serves with crackers, but I’ve enjoyed it with tortilla chips, on wraps, on top of salads, and by itself as well. It’s a great dish to make and eat on during the week – As well as a party appetizer hit!
The dietitian in me loves the flavor, but also how colorful and nutrient-dense the dish is. Look how pretty!
Cowboy Caviar
Equipment
- Mixing bowl
- Can opener
- Large Spoon
Ingredients
- 2 x 15.25 oz. Can Blackeye Peas
- 1 x 15.25 oz. Can Black Beans
- 1 x Can Corn, Whole Kernel
- 4 Roma Tomatoes, Diced
- 1 Bell Pepper, Diced (Any Color)
- 1/2 Bunch Cilantro, Chopped
- 1 Cup Ken’s Simply Italian Vinaigrette
- 2 tsp. Kosher Salt
- Optional: 1/2 Red Onion, Chopped
Instructions
- Grab a mixing bowl or large bowl with lid and a spoon – Pop open the cans and drain.
- Grab a cutting board – Wash and chop those veggies.
- Mix all ingredients in a bowl, add dressing and salt. Stir. Serve by itself, with crackers, with tortilla chips, on a wrap, on top of a salad – You do you!
- Cover and refrigerate for up to five days.
