Adult-ish SB&J Lunch

It seems “too easy” and like there shouldn’t even be a “recipe”, but that’s the point. Food does not have to be complicated or expensive, and you CAN have the foods you enjoy! So many individuals I see struggle with finding a way to consume a nutritious lunch, on a budget, and quick on time. Here is an idea for lunch to overcome those barriers.

Growing up being allergic to peanut butter, there weren’t many options for a lunchbox lunch. Despite my Mom’s efforts to make lunchbox lunches grand, a simple jelly sandwich with some Ruffles chips was my FAVORITE lunch as a kid. It wasn’t until about four years ago I discovered Sunbutter— Not to be dramatic… BUT my life has never been the same!

This is an adult-ish version of my favorite kiddo lunch. Good for the whole family. I added fresh raspberries to boost the nutrition content, used a jelly without high-fructose corn syrup, no sugar added Sunbutter, and a good quality bread that contains a wide variety of wholesome grains and seeds.

Did you know sunflower seeds have more heart-healthy fat than peanuts? It’s a good switch for anyone.

About the bread: Dave’s Killer Bread is my go-to. I tell all my patients about it and the majority love it! More importantly, the fiber content and wide range of grains and seeds helps manage post-meal blood sugar response. Quinoa, poppy seeds, barley, flax seeds, sesame seeds, rye, oats, triticale, millet, spelt, amaranth, sorghum… All of that goodness is in their 21 Whole Grains and Seeds bread. What an easy way to get in those ancient foods that many of us do not eat! You can find at Kroger and Walmart, or order online.

^ Psst… This bread is a little more expensive, but I make room for it by not getting those “impulse” buys (fancy drinks, gum, magazine, snack foods) at the store or alternating with a sale bread the next time.


Adult-ish SB&J

Sunbutter & Jelly: An upgraded version of my school lunches as a kid, the J&J (jelly&jelly), and a peanut-free version of PB&J. Made with good quality ingredients and a boost of nutrients, it’s a good lunch for the whole family. Pair with some sliced cucumber, strawberries, and a handful of those delicious Ruffles. #Balance

Equipment

  • Butter knife
  • Table spoon

Ingredients
  

  • 1-2 Tbsp No Added Sugar Sunbutter 1-2 Tbsp. = 1 heaping spoonful with a table spoon! It’s sticky and hard to measure.
  • 1/2 Tbsp All-Natural Strawberry Jelly See notes
  • 6-8 Raspberries
  • 2 Slices Dave’s Killer Thin-Sliced 21 Whole Grains and Seeds bread Sub: Any whole grain bread, seeds are a bonus!

Instructions
 

  • Lay the bread out.
  • Smear the Sunbutter on one piece and little bit of jelly on the other piece of bread.
  • Place raspberries on jelly side, smash with spoon.
  • Stick ‘em together, slice it in half. Enjoy!

Notes

Jelly: Look for on without high-fructose corn syrup. I chose Smucker’s All Natural based on good price and quality.
