Equipment

  • Crockpot

Ingredients

  • 1.5 # Pork loin roast I chose Simple Truth
  • 1 bottle Stubb’s BBQ Sauce Original or Spicy
  • Kosher salt & pepper To taste
  • 1 Tbsp. Pork meat rub, I use Dizzy Pig Dizzy Dust *Optional

Instructions

  • Grab your crockpot, plug it in!
  • Drizzle olive oil on bottom of crockpot. Remove pork loin from packaging and place in crockpot. Sprinkle salt, pepper, and (if using) pork rub on top of meat.
  • Pour whole bottle of BBQ sauce on top.
  • Turn that dial to 'Low' and let cook for 8 hours. #Magic
  • When it's time to eat, shred the meat in the crockpot with a fork and knife. Now it's BBQ pulled pork! Put on whole grain bread (I like Dave's Killer Bread or Simple Truth Whole Wheat Buns) or eat it bun-less, you do you.

Notes

If you can’t find pork loin roast, you can also use 1.5-2# pork tenderloin.

Skillet (Brussel) Sprouts

The only way to eat brussel sprouts. Ok, there’s another way that involves a lot of bacon and bacon grease, but that’s reserved solely for eating with macaroni and cheese. Here’s the Meredith way… Stay tuned for the Zach way!

Equipment

  • Skillet (Preferrably cast iron!)
  • Spatula
  • Knife
  • Cutting board

Ingredients

  • 18 oz. Brussel sprouts Time Saver: Buy pre-washed and pre-halved (more $)
  • 2 Tbsp. Extra-virgin olive oil Or butter (A little extra won’t hurt!)
  • 2 tsp. Kosher salt 1 tsp. if using table salt
  • 1/4 tsp. Black pepper To taste (Just a little shake!)

Instructions

  • If not using pre-washed and pre-halved, wash and trim the sprouts. I prefer to cut off the hard ends, then slice in half.
  • If you have a well-seasoned cast iron, whip it out! If not, whip out another skillet.
  • Drizzle oil into the skillet (or add butter) and turn to medium heat.
  • Add the sprouts. Add the salt and pepper. Stir.
  • Let sauté, stirring occasionally to prevent pieces burning, for about 15 minutes. You want them to be softened in the middle, and a little crispy on the outside.
  • Feel free to add more salt or pepper if needed. Taste test a few to make sure they aren’t poisonous. 😉

Servings 6

Equipment

  • Mixing bowl
  • Mixing spoon
  • Grater

Ingredients

  • 16 oz. Coleslaw Mix Just the veggies, not with dressing
  • 1/2 Head of purple cabbage
  • 1 Cup Mayonnaise I like Simple Truth or Duke’s
  • 1 Tbsp. Lemon juice Juice from half a lemon
  • 2 Tbsp. Apple cider vinegar
  • 1 Tbsp. Granulated sugar
  • 2 tsp. Kosher salt
  • 1/4 tsp. Black pepper To taste

Instructions

  • Grab a medium bowl.
  • Pour coleslaw mix into the bowl.
  • With grater in the bowl, grate the cabbage.
  • Add mayo, lemon juice, vinegar, sugar, salt, and pepper.
  • Stir it up! Cover and refrigerate until ready to eat. Best served chilled!

Notes

The purple cabbage can be omitted if unable to find or too expensive. This adds more bulk and more nutrients, simply reduce the mayo to 3/4 C if omitting.

To prevent waste for the remaining half of cabbage, you can boil it with water, sugar, salt and vinegar to make cooked cabbage, or shred it onto a salad.

Kitchen #Soulwork: Song I’m Hearing & Quote I’m Loving

Working in healthcare, you learn and see a lot that makes you change your idea of health, and life. You see people without a filter, you see the big difference a helping hand and listening ear can make, you see how important health is, and you see how precious life is in the most brutal ways. Maybe some people don’t get this out of it, but helloooo this woman feels every.thing. I tryyy not to take it to heart too much; I tryyy to just learn from it. I’m still learning this balance — Take care of yourself, but enjoy yourself. Take it serious, but don’t take it too serious. Love your people hard, but you can’t protect them from everything. Above all, try to enjoy the little, every day things and don’t freakin’ complain so much!
