16 oz. Coleslaw Mix Just the veggies, not with dressing
1/2Head of purple cabbage
1CupMayonnaise I like Simple Truth or Duke’s
1Tbsp. Lemon juice Juice from half a lemon
2Tbsp.Apple cider vinegar
1Tbsp. Granulated sugar
2tsp. Kosher salt
1/4tsp. Black pepper To taste
Instructions
Grab a medium bowl.
Pour coleslaw mix into the bowl.
With grater in the bowl, grate the cabbage.
Add mayo, lemon juice, vinegar, sugar, salt, and pepper.
Stir it up! Cover and refrigerate until ready to eat. Best served chilled!
Notes
The purple cabbage can be omitted if unable to find or too expensive. This adds more bulk and more nutrients, simply reduce the mayo to 3/4 C if omitting. To prevent waste for the remaining half of cabbage, you can boil it with water, sugar, salt and vinegar to make cooked cabbage, or shred it onto a salad.
