Salty olives, creamy feta cheese crumbles, acidic dressing and lemon, crunchy and sweet vegetables, and flavorful chicken thighs - Everything Greek and a complete meal, all in one dish. *Tip: Prep this meal ahead for an even easier meal time!
In a 9x13 baking dish - Drizzle olive oil to prevent sticking, and place chicken thighs on top. On top of each piece of chicken: A pinch of Kosher salt, a few shakes of ground black pepper, and a lemon slice.
Wash and cut bell peppers and red onion into thick slices. Add to dish.
Open and drain chickpeas and olives. Add to dish.
Pour salad dressing over top. Add feta cheese crumbles. *You can cover and refrigerate for up to 12 hours at this point!
When ready to eat, preheat oven to 400F. If dish has been prepped and refrigerated, remove from fridge ten minutes prior so it is not too cold for oven. Bake for 25-30 minutes (check chicken for doneness!). Plate & enjoy! Cover & refrigerate for up to three days.
