One of my favorite memories growing up is staying at my Mimi and Bob’s house and her making us Belgian waffles in the morning. Therefore, one of the first things I registered for when we got married was… a Belgian waffle maker! Luckily, we got one because it has been one of our most used items. It makes some Saturday or Sunday mornings so special to make these! This recipe seems like more work than going out to Waffle House, but it’s truly simple and quick. I love turning on some Jack Johnson, sipping coffee, and taking it slow. …Unless I’m really hungry, then I whip them up extra fast. Enjoy!

Waffles
Equipment
- Waffle Maker – I prefer Belgian
- (2) Mixing Bowls – (1) large, (1) medium
- Mixing spoon
Ingredients
- 2 C All-Purpose Flour
- 1 Tbsp Baking Powder
- 1 Tbsp Granulated Sugar
- 1/2 tsp Salt (Kosher or Sea Salt)
- 1/4 tsp Ground Cinnamon
- 1 Stick Butter (8 Tbsp.), Melted Sub: 8 Tbsp. Canola or Coconut Oil (Melted)
- 2 Eggs
- 1 1/2 C Whole Milk
- 1/4 C Sour Cream
- 2 tsp Vanilla Extract
Optional:
- 1-2 Tbsp Flax Seeds Adds a boost of fiber and heart-healthy fat!
Instructions
- Heat up waffle maker to desired setting for doneness – I turn the dial to 6 (Medium/High Heat)
- In large mixing bowl, whisk together the dry ingredients.
- Melt the butter. In a medium mixing bowl, whisk the two eggs well until bubbles appear. Add in the melted butter and remaining wet ingredients. Stir.
- Mix the wet into dry and stir until well-incorporated.
- Pour batter into waffle maker and cook until waffles are cooked through and golden brown. (Waffle maker may have a ‘Done’ button so you don’t have to check!) Cool on a wire cooling rack for some extra crunch. Serve with whatever your heart desires – See notes. ENJOY!
- To store in refrigerator: In air-tight container or Ziploc bag for up to three daysTo store in freezer: In an air-tight container or Ziploc freezer bag for up to one month Reheat: In waffle maker until warmed through, or in microwave for a quick option (won’t be as crispy, will be soft).
