Turkey Chili

*If you don’t have an Instant Pot, you can easily make this in a crockpot or on stovetop!

My crockpot was to the point where I had to tie a rubber band and put weights on top to hold the lid down and it either didn’t heat up or got too hot, so I finally let myself buy an Instant Pot! …A Pioneer Woman Instant Pot to be exact. I found it on sale at Walmart for $59.99, it is normally $99.99 — Woohoo! This discount is still available if you are in the market for one, or want to early Christmas shop for someone else!

I do not make any money off this, I just truly am so impressed with the Instant Pot. It has all the features of a crockpot (…so you don’t need both!), and it can cook food in an instant with it’s pressure cooker feature. Raw chicken was cooked in 10 minutes… I thought the crockpot was magic, but nope, this is! Ok, ok, on to one of my new recipes using it…

Turkey Chili: Instant Pot (Crockpot and Stovetop Adaptable)

Chili that tastes like it’s been cooking on the stove all day, made in 30 minutes? This recipe is packed with veggies, fiber and protein to make sure your meal is balanced AND tasty. (See notes to adapt recipe to crockpot or stovetop cooking methods!)

Equipment

  • Instant Pot/Pressure Cooker

Ingredients
  

  • 1 Tbsp. Extra-virgin olive oil
  • 1 # Ground turkey
  • 1 Onion
  • 2 Cups Chicken broth/stock
  • 2 Bell peppers
  • 1 15 oz. can Black beans, spicy
  • 1 15 oz. can Dark red kidney beans
  • 2 10 oz. cans Diced tomatoes
  • 1 6 oz. can Tomato paste
  • 1 Tbsp. Chili powder
  • 1 Tbsp. Kosher salt 2 tsp if using table salt
  • 2 tsp. Cumin
  • 2 tsp. Oregano
  • 1 tsp. Garlic powder
  • 1/2 tsp. Black pepper
  • 1/8 tsp. Cayenne pepper Just a little shake…

Instructions
 

  • Wash & chop onion and bell pepper.
  • Using the sauté feature on the instant pot, sauté the chopped onion with ground turkey until meat is browned. (See notes for crockpot or stovetop methods.)
  • Add the remaining ingredients and stir. Set to “soup/stew” setting or pressure cook on high for 20 minutes.
  • Top with a dollop of sour cream, shredded cheese, and whole grain crackers. …& Close your eyes and pretend it is 60 degrees outside. 😉

Notes

To make in a crockpot: 
1. Sauté chopped onions in skillet on stovetop and brown the ground turkey.
2. Transfer to a crockpot, add remaining ingredients. Cook on low for 6 hours, or high for 3 hours. 
To make on stovetop:
1. Sauté chopped onions in large soup pot, then brown the ground meat. 
2. Add remaining ingredients, and cook on stovetop for 45 minutes.
