Strawberry Poppyseed Salad

Less than 5 minutes of your time, the sweet flavors of summer, and loaded with nutrients like folic acid, zinc, vitamin C, magnesium, and vitamin K. This salad does not have meat, but instead uses cheese and pumpkin seeds to add protein – This helps reduce cost just a little ($2.50/serving).

Did you know pumpkin seeds are also known as “pepitas.” They are a good source of important nutrients (that many individuals needs more of!) like magnesium, manganese, zinc, phosphorous, iron, copper, and Vitamin K. They also are a great source of heart-healthy fats that help fight inflammation in the body. You don’t have to wait until you carve a pumpkin to get these into your eating routine. 😉

Ingredients
  

  • 5 + Oz. Arugala, Spinach, Baby Kale… Any leafy greens!
  • 1 # Strawberries, fresh
  • 4 Oz. Crumbled goat cheese Can sub: Feta, Parmesan…
  • 6 Oz. Pumpkin seeds, raw Can sub: Sunflower seeds, pecans…
  • 1 Bottle Poppyseed Dressing I like: Brianna’s, TesseMaes, or BoltHouse Farms
  • Optional: Sprinkle of kosher salt and pepper, to taste

Instructions
 

  • Grab a bowl or to-go container, layer: Greens, 3-4 chopped strawberries, 1/4 C pumpkin seeds (A shake!), 2 Tbsp. (A shake!) of goat cheese crumbles, and 2 Tbsp. (A little drizzle!) of dressing. Add a pinch of kosher salt and a shake of pepper if you want. Enjoy!
