This is so simple, yet so good. I don’t know about you, but breakfast is not the time to make things difficult. I obviously love cooking and the kitchen, but weekday mornings are typically rushed. Breakfast is a meal I find many of my patients skipping for that reason — Oddly, I see it with many individuals who have type II diabetes. Breakfast doesn’t have to be fancy, but it is important to start the day strong within four hours of waking. Get that metabolism revved up and your brain the energy to work hard. This recipes takes 4-5 minutes of your sweet time!
Avocados are very popular these days, and that is one trend I will gladly jump on the wagon with. According to Healthline, one avocado provides:
- Vitamin K: 26% of the daily value (DV)
- Folate: 20% of the DV
- Vitamin C: 17% of the DV
- Potassium: 14% of the DV
- Vitamin B5: 14% of the DV
- Vitamin B6: 13% of the DV
- Vitamin E: 10% of the DV
- It also contains small amounts of magnesium, manganese, copper, iron, zinc, phosphorous and vitamins A, B1 (thiamine), B2 (riboflavin) and B3 (niacin). (Healthline)
Everything Avocado Toast
Equipment
- Skillet
- Spatula
- Knife
Ingredients
- 1/4-1/2 avocado smashed
- 1 egg scrambled
- 1-2 slices whole grain bread Dave’s Killer Thin-Sliced
- 1/8 tsp Everything Bagel Seasoning ”a shake”
Instructions
- Toast the bread
- Cut the avocado, smash onto the toast
- Scramble the egg, place on top of toast with avocado
- Sprinkle seasoning on top
