Chicken Ranch Quesadilla

Quesadillas… So simple to make with only six ingredients, you don’t need to dirty silverware to eat, the kids and adults love them, AND these have the nutrients you need at a meal! Oh yes, and they’re delicious.

You can use either flour or corn tortillas — Corn tortillas have less carbohydrates and less calories (they are smaller in size). You can also use (1) flour tortilla and fold it in half.

Chicken Ranch Quesadillas

I’ve never met a quesadilla I didn’t like. However, some (*cough, cough* Taco Bell) don’t make me feel the best afterwards. This recipe is using good quality ingredients and packed with nutrition to satisfy your craving and nourish your body. Easy enough for weekday lunch or dinner!

Ingredients
  

  • 1.5-2# Chicken (Breast or Tenderloins)
  • 1+ tsp. Extra-virgin Olive Oil
  • 1+ tsp. Kosher Salt
  • 1/4 tsp. Black Pepper
  • 8 oz. Shredded Mexican Cheese I like: Sargento
  • 1 Cup Ranch Dressing I like: Tessemae Cilantro Lime Ranch
  • 2 Cup Spinach, Raw In other words: 2 “big ole” handfuls
  • 8 Tortillas I like: Mission Organics Flour or Corn

Instructions
 

  • Season chicken with 1 tsp olive oil, 1 tsp kosher salt and 1/4 tsp black pepper.
    Crockpot (do 6-8 hours in advance): Cook on low for 6-8 hours with 1/2 C water/broth.
    Instant Pot: Pressure cook on high for 10 minutes with 1 C water/broth.
    Oven: Preheat oven to 350F, and bake for 20 minutes, or until no pinK.
  • Take cooked chicken, cut with fork and knife into slices.
  • In mixing bowl, add sliced chicken, bag of cheese, 2 cups of spinach, and 1 cup of ranch dressing. Stir.
  • Preheat skillet to medium heat, sprinkle kosher salt in pan and drizzle olive oil. Place (1) tortilla in skillet, fill with 1/2 to 3/4 C chicken mixture and spread out evenly, top with another tortilla and press down firmly with the back of a spatula. Cook for 3-5 minutes on each side — Until cheese is melted and spinach is wilted.
  • On cutting board, slice into halves or quarters (I use a pizza cutter).
  • Enjoy with fresh avocado or cherry tomatoes, your favorite salsa, and/or sour cream!
