BBQ Chicken and Sweet Potatoes
Red onions and BBQ sauce with chicken roasted in a cast iron skillet. Sweet potatoes roasted with olive oil and kosher salt in the oven. Preferred with a drizzle of Ranch dressing. A quick meal that is nutritious and delicious, and with minimal cleanup!
Equipment
- Cutting board
- Knife
- Cast iron skillet
- Baking sheet
- Aluminum foil – Optional
Ingredients
- 2 tsp butter
- 1 lb. chicken breast
- 1 C BBQ sauce Stubb's Regular
- 1 red onion
- 4 sweet potatoes
- 2 Tbsp olive oil
- 2 tsp kosher salt
- Ranch dressing – Optional
Instructions
- Preheat oven to 400F. Line baking sheet with aluminum foil. Wash sweet potatoes and cut slit on one side of potato. Drizzle olive oil and rub kosher salt to completely cover sweet potato in oil and salt. Place on baking sheet, bake for 45 minutes.
- Put butter into cast iron skillet and preheat to medium heat. Cut red onion into thick slices and place in skillet. Add the chicken. Sprinkle kosher salt and pepper to taste. Pour BBQ sauce on top. Cook chicken in skillet for 5 minutes on each side. Transfer to oven, uncovered, for 15 minutes. Test that chicken is cooked through – No pink!
- Plate potato, smash, and place chicken on top. Add onions and extra BBQ sauce. Drizzle ranch dressing on top if you so please… (I so please! #TeamRanch)
