Life lately in the kitchen… It’s a beautiful mess, just like life in general. Yes, I love a clean house and I get anxious when it’s too messy, but him moving around and getting into everything is truly beautiful..wonderful..amazing in my eyes. I prayed for this day and know all too well that it’s a blessing to get to see your child progress, so I’m smiling at it all… And often (every day) wondering how the heck I’m going to get done all that I need to get done. Sometimes I’m calm and just watching it all, and sometimes I’m hustling through my to-do list like a mad woman (while he’s making another mess lol).
He is now one, and I want to move forward with only the lessons I learned and goodness I found last year. His first birthday and birthday party were absolutely two of the best days of my life, a complete 180 from life a year ago. I dreamed of his first birthday for months and months, it kept me going. When I was pregnant, Zach said, “You’re going to be planning his first birthday before you know it.” I couldn’t even think past the day at that point. But he was right, like he normally is. ๐ In some ways I was more proud and joyful about his first birthday than our wedding day! It really felt like turning the page to brighter days. “Here comes the sun…”
Soooo, with all of that said… I’ve been making up a lot of Instant Pot meals! Some have been great… Some have been not so great (like the crunchy vegetable soup I made last week). This Broccoli Chicken Alfredo is one that is too easy and delicious not to share, and it is soft enough for babies who are getting into finger foods. I’ve said it before and I’ll say it again… Every working Mom needs an Instant Pot!

Broccoli Chicken Alfredo
Equipment
- Instant Pot
- Large pot
- Colander
Ingredients
- 4 Frozen Chicken Breasts
- 1 12 oz. Frozen Chopped Broccoli
- 1 15-16 oz. Jar Alfredo
- 1 12 oz. Box Whole Wheat Spaghetti Noodles
Instructions
- Throw frozen chicken & broccoli with entire jar of Alfredo into the Instant Pot, cook on high pressure for 12 minutes.
- On stovetop, boil water and cook spaghetti noodles to desired doneness.
- Add together and enjoy!
